Venetian Pizza at its Best

As young'ens with a limited budget, Erik and my train journey around Europe was filled with pizza, shawarma and cheap beer.  We were in Venice for 3 days and had 5 pizzas.  It was hard to go wrong when looking for a good pie, and here is a photo of a 5 euro meal that was beyond delicious.  The tomato sauce and the cheese were of a quality that is unmatched, even in New York City.  So fresh! So good!  We grabbed our pizza to-go and walked a bit away from the tourists to find a little nook at the end of a street where we could sit on the steps and watch the happenings on the canal.  Boats going by, the sun setting, and even a woman who took out a long sword-looking-thing to try to lure in her paper cup that had fallen in the canal, made our evenings special.

Stuffed Pepper

ingredients:
quinoa
asparagus
corn
onion
cheddar cheese
red pepper

Next time, I will cook the pepper with the filling for a bit longer so that the pepper is softer. Also, I'll mix the quinoa and the veggies together before stuffing the pepper instead of layering the ingredients. Overall, it was a yummy dinner!

Welcome!

Hello there,

This is my first blog.  I am totally new to this experience and am very excited to get going!  I am  moving back to the US from 14 months of living and working in Copenhagen and hope that this blog will encourage me to stay interested in cooking, besides how busy things may be.  I intend for this to be a foodie blog - not a space where I will divulge my deepest, darkest secrets, but a place where common interests can be shared. I love to write, take photos and eating is my most favorite hobby and what better way to do that than through this blog?

Cooking/baking or in my case, struggling to cook/bake, is relatively new to me.  This past year, my boyfriend Erik and I spent a lot in the kitchen (eating in restaurants in Copenhagen is neither affordable nor worth it).  I like to experiment and try new things and have found others' food blogs really inspiring, so I'm trying to add to the network.
